My favorite French toast…waffled!
The days are getting longer, and that means spring is coming – or at least that’s what I would like to believe. The one reason I’m craving spring is because spring = brunch season…and I love to photograph, style (and eat!) breakfast food.
I have been on such a breakfast kick lately. But I have absolutely no problem with that because there isn’t anything much better than having Sunday breakfast every day of the week, especially when I’m busy and running around. Having this breakfast already prepared is surely convenient.
I would definitely take waffles over pancakes, and you’ve probably figured that out already considering I waffled French toast. However, pancakes have their own qualities that I love (try these Ricotta Pancakes!).
If you really think about it, so many foods can be waffled. Tater tots, grilled cheese, cinnamon rolls, cauliflower, frittatas, s’mores, brownies, apples…and now French toast.
For this recipe, it’s so important to cut thick slices of Challah bread (and I do recommend Challah, but really any bread would work). In addition, the beauty of French toast is that it is best made (yes, best!) with stale bread. What recipe tells you to use stale bread (only French toast)? The reason for this is because the stale, porous bread becomes soft when it soaks up the eggs mixture. So, have frozen bread? This is the recipe for you.

Waffled Maple Banana Blueberry French Toast
- 6 challah bread slices ((or any type of bread slices, about 3/4" thick))
- 5 large eggs
- 1/8 cup of milk ((any type))
- 1/4 cup of maple syrup
- 2 tsp of ground cinnamon
- 1 banana, mashed
- 1/4 cup of frozen blueberries
- fresh banana ((optional))
- fresh blueberries ((optional))
- In a wide dish (casserole dish), beat eggs, milk, maple syrup, ground cinnamon, and mashed banana until well-incorporated. Add in frozen blueberries, and mix well until blueberry juice is released from blueberries.
- Preheat a waffle maker. Coat both sides of bread slices in egg mixture, and directly place in waffle maker once fully heated. Cook for 2-3 minutes or until golden brown.
- Serve with fresh banana, blueberries, and maple syrup. Dig in!
