A fluffy vanilla loaf with hints of orange

This pound cake has the perfect balance of citrus and vanilla. It is really not that difficult to make – 15 minutes to prep max!

Not to mention it makes your kitchen smells soooo good – it’s so hard to have to wait an hour for it to bake.

But it sure is worth it πŸ™‚

Sunny Orange Pound Cake.

  • 1-1/2 cups plus 4 tablespoons white, granulated sugar
  • 14 tablespoons unsalted butter, softened to room temperature
  • 4 large eggs
  • 2 teaspoons vanilla extract or 1 vanilla bean
  • 1 teaspoon almond extract
  • Zest of 2 oranges
  • 1/2 cup orange juice or juice of 1 orange
  • 2 cups all-purpose flour
  • 2 teaspoons salt
  • 2 teaspoons baking powder
  • Orange slices
  1. Preheat oven to 325 degrees F. Grease a loaf pan, and set aside.
  2. Beat sugar and butter in a large bowl until light and fluffy. Add the eggs in, one at a time, beating after each addition. Beat in the extracts, orange zest, and orange juice. Fold in the flour, salt, and baking powder. Pour batter into loaf pan, and top with orange slices. Sprinkle on additional 4 tablespoons of sugar.
  3. Bake cake for 60-65 minutes or until a toothpick inserted in the center comes out clean. Slice, and enjoy warm!
