I’ve made the executive decision. Waffles are my favorite breakfast “indulgence” food. So new year, new waffle recipe.

Turkey Bacon, Scrambled Egg, and Cheddar Breakfast Waffle (+ Freshly Squeezed Orange Juice).
Breakfast Waffle
- 4 eggs, separated into yolks and whites
- 2/3 cup of butter
- 2 cups of milk
- 1/2 cup of sugar
- 2-2/3 cups of flour
- 1/2 tsp of salt
- 2 tsp of baking powder
- 2 teaspoons ground cinnamon
- 2 teaspoons coconut or canola oil
- 3 large eggs
- 1/2 teaspoon salt
- 1 slice cheddar cheese
- 3 slices turkey bacon
Freshly Squeezed Orange Juice
- 3 large oranges
- Beat egg whites until fluffy in a bowl. Set aside.
- In a separate bowl, beat egg yolks, butter, milk, and sugar until light and fluffy. Fold in flour, salt, baking powder, and cinnamon. Fold in egg whites until just combined, but do not deflate them.
- To make scrambled eggs, heat oil in a large skillet. Add eggs, and mix until scrambled and half cooked. Sprinkle with salt. Add cheddar cheese on top of eggs, and cook until cheese has fully melted. Remove eggs from heat, and cook bacon in same pan.
- Preheat waffle iron.
- Add about 1/2 cup of batter for each waffle to iron. Cook for 2-3 or until waffles are golden brown and fully cooked. Add eggs and turkey bacon in between two waffles. Serve warm, and EAT!
- To make orange juice, squeeze all the juice out of the oranges, and enjoy
