‘Tis the season for Christmas-themed granola!
What’s better than ordinary granola? Gingerbread Cookie Spice Granola! Duh!
I feel like post-Thanksgiving is for all things Christmas. I’m not one to celebrate Christmas immediately after Halloween. There’s just something wrong about putting up the Christmas tree while autumn leaves are still on the trees. However, once Thanksgiving comes to an end and all the turkey leftovers are gone, all hail Christmas treats 🙂
So what’s my favorite Christmas treat? By far gingerbread! And of any kind, too – give me gingerbread or gingerbread cookies, and I will surely be happy.

Gingerbread Cookie Spice Granola.
- 3 cups oats
- 1 cup puffed quinoa
- 1 cup shredded coconut
- 1/2 cup pecans, chopped
- 3/4 pepitas
- 1/2 cup maple syrup
- 1 tablespoon molasses
- 1 tablespoon honey
- 1 tablespoon coconut oil, melted
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1 cup mini gingerbread cookies
- Preheat oven to 350 degrees F.
- In a large bowl, mix together oats, quinoa, coconut, pecans, pepitas, maple syrup, molasses, honey, coconut oil, cinnamon, ginger, cloves, and nutmeg. Add in gingerbread cookies. Pour mixture on a large baking sheet, and bake for 10-15 minutes or until the oats are golden.

Serve with milk or add to a parfait! Enjoy 🙂
