Seared Salmon Farro Bowl with Marinated Heirloom Tomatoes

Quick and easy summer dinner? You’ve come to the right place.

This salmon bowl takes about 20 minutes tops to whip up. So if you’re in a rush coming back from the beach or just feel plain lazy, this meal will be your new favorite dish to make. I mean, I’ve always wanted a solution to make something healthy when I’m in a rush since most times on the go, a quick piece of bread is the only thing I can grab. Well, not anymore 🙂

How pretty are these tomatoes? They were on sale for the same price as regular tomatoes, but since this is practically the peak of tomato season, they taste 100 times better! They’re the perfect combination of juicy and sweet, and if you can get your hands on some local heirloom tomatoes, I 10/10 recommend. The tomatoes add freshness to the dish and pair so well with the salmon and farro. Just slice them up, add some fresh (and dried!) herbs, olive oil, and vinegar, and you’re golden (like that tomato :)).

I love farro since one, it’s healthy, and two, it takes only 10 minutes to cook! However, you can substitute wild rice (takes a little longer to make) or quinoa for the ancient Egyptian grain. Any of the above solutions are sure to make a yummy summer dinner (or lunch!).

This bowl is also super filling if you’re worried that it won’t hold you until you’re next meal. Salmon contains healthy fats and is super hearty (not to mention healthy!), and the farro is packed with protein that will keep away the hunger. And the tomatoes, well they’re just my favorite.

I added micro greens to the bowl as well for greens. They add additional freshness to the bowl and pair really well with the juicy tomatoes. If you don’t have micro greens on hand, you can substitute spinach, kale, alfalfa sprouts, or really any of your favorite greens for them.

Seared Salmon Farro Bowl with Marinated Heirloom Tomatoes

Marinated Heirloom Tomatoes

  • 2 heirloom tomatoes, sliced about ¼” thick
  • 3 tsp olive oil
  • 2 tsp balsamic vinegar
  • ½ cup fresh basil, chopped
  • 2 tsp dried parsley
  • 2 tsp dried oregano
  • 1 tsp dried tarragon
  • ½ tsp dried dill

Seared Salmon Farro Bowl

  • 1 cup dried farro
  • 1 salmon filet
  • ½ tsp salt
  • ½ tsp ground black pepper
  • micro greens ((optional))
  • fresh basil ((optional))
  1. In a small saucepan, cook farro in boiling water according to directions on package (should take about 10 minutes to cook from boiling time to completion). Drain, and set aside.
  2. In a small bowl, add all of marinated tomato ingredients. Mix well, until tomato is evenly coated in oil, vinegar, and herbs, but be careful not to break up the tomato slices. Allow tomatoes to marinate while you prepare the salmon.
  3. Heat a small saucepan over medium heat. Rub salt and ground black pepper on all sides of salmon. Add salmon filet to saucepan, and sear all sides until salmon is fully cooked, about 2-3 minutes per side.
  4. To assemble bowl, add cooked farro to large bowl, and top with salmon, marinated tomato slices, and micro greens. Enjoy!
