Farmer’s Market Veggie Burger with Spinach Hummus for #MeatlessMonday (Burger Week Day 2)

A protein-packed burger paired with my favorite hummus – with spinach!

Today for Day 2 of Burger Week, I’m posting a recipe for a veggie burger! No meat here today.

Many people think that veggie burgers are either gross or not filling enough…or both. This Farmer’s Market Veggie Burger is packed with tons of protein (thanks to the pinto beans!), flavor (tons of veggies added, hence “Farmer’s Market”), and moisture (thanks to the zucchini). So this is definitely a way to change it up at your next barbecue. Or simply serve both meat and veggie burgers for a barbecue to satisfy both parties! However, meat-lovers will definitely like these burgers as well. I mean, they even look like meat:

This spinach hummus is no doubt my favorite hummus. You can taste the subtle spinach flavor, but it is definitely not overpowering. Not to mention, the hummus even reminds me of pesto (ok, possibly my absolute favorite dip/sauce) because it’s green 🙂

Farmer's Market Veggie Burger with Spinach Hummus for #MeatlessMonday (Burger Week, Day 2)

Spinach Hummus

  • 2 cups chickpeas
  • 3 cups fresh baby spinach
  • ½ cup tahini ((or purée ¾ cup sesame seeds))
  • ½ cup olive oil
  • 1 clove garlic
  • ½ tsp cumin
  • ½ tsp paprika
  • 1 tsp salt
  • 1 tsp ground black pepper

Burger

  • 2 cups pinto beans, mashed
  • ¾ cup panko breadcrumbs
  • 1 large egg
  • 1 medium zucchini, shredded
  • 2 large carrots, shredded
  • 1 tsp salt
  • 1 tsp ground black pepper

Toppings

  • Deli thins or burger buns
  • Fresh heirloom tomato, sliced
  • Fresh cucumber, sliced
  • Fresh radishes, sliced
  • Fresh or grilled sweet corn
  • Alfalfa sprouts
  1. To make hummus, purée all hummus ingredients in a food processor. If hummus is too thick, add a little water. Set aside.
  2. In a large bowl, combine all burger ingredients. Preheat a large grill skillet with 1 tsp of olive oil. Grab about 3 tbsp of burger, and form into patty. Grill for 6 minutes, 3 minutes per side or until burger is browned.
  3. Spread hummus on deli thin or burger bun, add burger (or two!), and top with your favorite desired toppings, like heirloom tomato, cucumber, radishes, sweet corn, and alfalfa sprouts. Dig in!
