Whole grain toast with fresh summer cherries and creamy Brie cheese
What can you not put on toast? A toasted piece of any type of bread is possibly the best pair for pretty much any topping. So today’s toppings for #toasttuesday are creamy whipped butter, Brie, pecans, and sweet summer cherries.
I don’t know why, but cherries just look prettier when they’re cut in half. This is the first time I’ve styled them like this, and I love how they look – especially summer cherries are so fresh and juicy this time of the year. Although they’re no match for watermelon, cherries are super refreshing on a hot summer day. I haven’t made up my mind though, regular cherries or the tie dye rainier ones???
Brie and cherries is a match made in heaven. Something about the subtle taste of brie combined with the sweet, slightly tart cherries is so satisfying, summer-like, and substitute apple slices for the cherries, and you have a quick, autumn snack (perfect for that awkward summer to autumn transition stage when apples are in season again J). I highly recommend the combination of cherry preserves and fresh cherries on this toast. The cherry preserves add extra sweetness that counteracts the butter and Brie while the fresh cherries add a slight tartness and crunch. To me, pretty much the definition of yum.
Spreading butter on the toasted toast (or even before you toast the bread!) is absolutely imperative for this recipe, and I find that it rounds out the flavor and makes the toast a little moist (hate that word!) so it’s not too crunchy like crostini.
This toast took me 10 minutes tops to prepare, and I don’t think it gets easier. Just some fresh cherries and jam, butter, toast, Brie, and pecans (optional, but highly recommended!), and you have yourself a pretty sweet summer breakfast (pun intended!).

Buttered Brie and Cherry Pecan Toast (for #ToastTuesday)
- 3 tbsp butter ((I used Earth Balance buttery spread.))
- 1 tbsp fresh thyme
- 2 slices whole wheat or whole grain bread
- 2 tbsp cherry preserves
- 4 slices (or cubes) Brie cheese
- fresh cherries ((as topping))
- 2 tbsp pecans, crushed
- Whip butter and thyme together in a small bowl. Spread about 2 tsp of butter mixture onto each slice of bread. Toast bread in toaster or in a 350?F preheated oven until bread is lightly toasted, about 1 minute. Add about 1 tbsp of cherry preserves and 2 slices (or cubes) of Brie to each slice of toast, and toast for another 2 minutes until Brie has melted.
- Add chopped, fresh cherries and crushed pecans to the top of each toast. Devour!
