In the height of summer, the last thing you want to be doing is slaving away in a hot kitchen preparing various meals. You ideally want fast meals that are cooler while also remaining filling. You could make these with all the ingredients you have in your cupboard at the moment. They are great for both on the run breakfasts and sit down ones. Life is busy and sometimes you can’t stop for breakfast. These can be made ahead of time and enjoyed the next day as well, so great to make on the weekend for a busy Monday morning. Who ever said you couldn’t enjoy ice pops when you’re trying to be healthy. It is all about knowing what you can and can’t eat. Everything in moderation is the key here and if you snack on fruit then that is better than a bag of crisps. Although you couldn’t make a crisp ice pop so let’s have a look at some fruit ideas. Fruit contains a lot of the vitamins and nutrients that you need to function so these ice pops are a wonderful way to get these. You could try lemon and apricot which will give it a lovely summer feel as you are slurping away. 

 

Broth

Something that takes no time at all is broth and you can heat it in the microwave or on the hob whenever you fancy some. Salmon With Vegetables

Another meal that is great for summer time and rather underrated is salmon. This takes a total of around 20 minutes to cook, be aware you don’t want to overcook salmon as then it will be tough to eat. The perfect salmon can be made with a tiny amount of butter and some lemon juice. You could also add some spices if you want to add a kick to it. Place it in the oven and allow it to cool slightly before removing the salmon from the skin. Serve this dish with hearty green vegetables such as asparagus or long stem broccoli. 

 

Sweet Potato Fries

Finally, if you are missing chips and let’s face it who wouldn’t be. You can make these simple fries alternative that are maybe even tastier than the real thing. Sweet potato fries might not sound appealing but they have become increasingly popular in recent years. Even restaurants have started offering them as a healthy alternative to fries. Chop up some sweet potato, toss with a tiny bit of oil and herbs then either put them in the oven or throw them in your air fryer for around 12 minutes.
