Ancestors on my Grandpa Petteruti’s side
There are plenty of hearty soup recipes that don’t require meat or dairy. Using only vegetables and legumes, you can save money and create something that’s tasty and healthy. Below are just seven super vegan soup options.
Carrot and Coriander Soup
Got some spare carrots in your kitchen? A carrot and coriander soup could be a great way of using up these ingredients. This tasty sweet soup can be easily made by blending up peeled carrot slices and coriander. This can be thickened up with potato and spiced up with some chopped onion.
Tomato Soup
Tomato soup is a staple soup that is also very easy to prepare. While typically thickened up with cream, you can use coconut milk and cashew cream to achieve pretty much the same effect. Onion, basil, paprika and oregano can all be used to spice up this soup and give it an Italian tang.
Sweet Potato and Coconut Soup
This Thai soup consists of sweet potato, coconut and Thai green curry paste. It’s the perfect soup for when you fancy something a little exotic and could make a great starter to a Thai curry dish. Consider serving this with some naan bread.
Lentil Soup
Lentils are often used as a meat substitute and can be great for throwing into a wholesome winter soup. You can pair all kinds of ingredients with lentils – carrots, potatoes, onion and tomatoes all work well. Check out this homemade lentil soup in an instant pot for a tasty recipe. Feel free to throw in some spices such as dijon mustard and garlic.
Spicy Black Bean Soup
Black beans are another popular vegan meat substitute. They can be incorporated really well into a spicy soup by combining them with garlic, cumin and red pepper flakes. Onions, carrots and celery can help to thicken out the soup and give it a healthy freshness. For a Cuban twist, consider garnishing with some chopped avocados and drizzling with some lime juice or sherry.
Miso Noodle Soup
Miso noodle soup is a popular Asian soup that is also very easy to make. This typically includes tofu, noodles, vegetable broth and a tablespoon of white miso. You can add all kinds of vegetables to this soup to give it extra flavor and texture. Pepper, onions, snow peas and carrots all make great options. Make sure to throw in some ginger and mushrooms too for that authentic Asian taste.
Pea Mint Soup
As the name suggests, this tasty green soup consists of peas and mint. It has a very fresh taste to it thanks to the mint and it can make a great palate cleanser between courses (if you’re planning a multi-course meal). Pea mint soup is often thickened out with potato and spiced up with onion and garlic. You can also give it a creaminess by adding in coconut milk and cashew cream.
