Pizzelle al cioccolato
These in combination with vanilla pizzelle can be part of a Christmas dessert spread!
Christmas Eve Chocolate Pizzelle.
- 3 large eggs
- 1 cup white, granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon espresso powder
- 1/2 teaspoon salt
- 1-2/3 cups all-purpose flour
- 1/4 cup cocoa powder
- 2 teaspoons baking powder
- 8 tablespoons unsalted butter, melted
- 8 ounces semisweet chocolate, melted
- Christmas sprinkles (optional)
- Beat the eggs and sugar in a large bowl until light yellow in color. Whisk in the oil, extracts, salt, flour, cocoa powder, and baking powder. Stir in the melted butter.
- Allow the batter to sit at room temperature for at least 30 minutes. Preheat a pizzelle iron. Take about 1 tablespoon of the batter per pizzella, and place it in each mold of the preheated iron. Cook for 20-30 seconds until firm. Place on a wire rack to cool. Repeat the remaining batter, and dip each pizzella in melted chocolate. Buon Natale!
