A perfect early spring appetizer
This appetizer/side dish is super easy to prepare and is perfect to serve at your Easter table.

Roasted Salami-Wrapped Asparagus.
- 1 pound asparagus, washed and one inch of ends chopped off
- 2 cloves garlic, halved
- 1/2 pound genoa salami
- 1/4 cup walnuts, chopped
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1 teaspoon ground black pepper
- 2 sprigs oregano, chopped
- 2 teaspoons sage, chopped
- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
- Wrap two slices of salami around each asparagus sprig, securing each with a toothpick. Add the asparagus to the baking sheet along with the halved garlic cloves. Sprinkle over walnuts, and drizzle everything with olive oil. Top with paprika, salt, pepper, oregano, and sage.
- Roast asparagus for 20-25 minutes or until they are slightly crispy and the salami is firm. Enjoy fresh!
