Guacamole with fresh vegetables from the spring farmer’s market
There is something about guacamole that is so fresh yet so hearty at the same time.
I think it’s the combination of creamy avocado and fresh veggies that make it so delicious yet refreshing. Even spread this guacamole on some toast, top with a poached egg, and you have a healthy breakfast!
Personally, I feel that you cannot have guacamole without pepper and a mix of both lemon juice and lime juice. The lemon adds freshness and the lime adds a distinct tartness characteristic of traditional guacamole. The best of both worlds!

Farmer's Market Guacamole.
- 4 avocados
- 1/2 red bell pepper,
- 1 cup cherry tomatoes,
- 1/2 red onion,
- 2 cobs boiled sweet corn,
- Juice of 1/2 lemon
- Juice of 1 lime
- Salt and ground black pepper ((to taste))
- 1/2 teaspoon ground cayenne pepper
- 1/2 teaspoon ground cumin
- 1/4 cup fresh cilantro
- 1/4 cup fresh basil

Mash avocados in a large bowl until chunky and partly smooth. Mix in diced pepper, tomato, onion, and sweet corn. Add juice of lemon and lime as well as salt, black pepper, cayenne pepper, and cumin. Mix in fresh cilantro and basil. Serve fresh with tortilla chips. Enjoy!
