The best simplest breakfast

I have always believed that eggs and toast is the best breakfast.

What better way to present the classic breakfast than with an egg-in-a-hole? It’s practically eggs and toast in one.

As you might already know, I absolutely love pesto. Basil is my favorite herb so I’ll eat practically anything slathered in the classic green sauce.

Simple Pesto Egg-in-a-Hole.

Homemade Pesto

  • 2 cups fresh basil
  • 1 cup fresh parsley
  • 1/2 cup pine nuts
  • 1/2 cup olive oil
  • 1/2 cup parmesan
  • 1/4 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/4 cup water

Egg-in-a-Hole

  • 1 teaspoon olive oil
  • 1 slice whole wheat bread ((or your favorite bread))
  • 1 large egg
  • Sesame seeds
  • 1/4 avocado
  1. To make pesto, add all pesto ingredients to a food processor, and pulse until they form a smooth paste. If too chunky, add more water; if too liquidy, add more basil. Set aside.
  2. Heat olive oil in a large skillet over low heat. Cut a circular hole in the bread, and place bread in pan. Spread pesto on top of bread, and crack egg into hole. Cook until the egg slightly runny (or cooked to your desire). Remove from heat, and serve with sesame seeds and fresh avocado. Enjoy!
