The go-to avocado toast

I have never loved avocado toast so much.

To me, it’s basically the perfect meal – no matter what time of day. Breakfast: add a poached egg and sliced radish; Lunch: top with deli meat and sriracha; Dinner: grilled chicken and roasted vegetables make the perfect ensemble; Dessert: berries all the way πŸ™‚

With all the fresh spring produce, there is no excuse to whip up a healthy avocado toast. Add your protein, veggies, and herbs/spices to top!

Protein-Packed Avocado Toast.

  • 1/2 cup chickpeas, cooked and rinsed
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 slice whole wheat (or your favorite bread), toasted
  • 1/2 avocado, mashed
  • Salt and pepper ((to taste))
  • 1 hard-boiled egg, sliced
  • Fresh dill
  1. In a small bowl, stir together chickpeas, olive oil, vinegar, basil, oregano, and parsley. Set aside.
  2. Spread mashed avocado onto toasted bread. Sprinkle on salt and pepper. Top with sliced egg, chickpeas, and fresh dill. Enjoy!
