A comforting pasta for those late February blues
We are officially nearing the end of February, and even though spring is less than a month away, it hardly feels like it. I woke up today and opened the weather app only to find that it read 18 degrees F.
With this chilly weather should come all the comforting pasta recipes! This Chicken Florentine Radiatori is certainly one of those.
It’s just the right balance of healthy and comfort in one meal. Who said that comfort food can’t be healthy?! 🙂

Chicken Florentine Radiatori
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 pound boneless, skinless chicken breast, sliced into strips
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon dried parsley
- 3 cups fresh spinach, chopped
- 3/4 cup milk (any type) or light cream
- 6 ounces radiatori
- Heat olive oil in a large skillet over medium-low heat. Add in minced garlic, and sautée until fragrant. Add in chicken strips, salt, pepper, and parsley, and sautée until chicken is nearly fully cooked. Meanwhile, boil pasta and cook until al dente according to package instructions.
- Add about 1/2 cup of pasta water into chicken mixture. Toss spinach into chicken mixture, and sautée until fully cooked. Pour in milk, and add in drained radiatori. Stir until pasta is well coated in sauce. Serve, and enjoy hot!
