The fluffiest banana bread
If you’re like me, you simply cannot have just a latte. You need to have something to go with it – a cookie, sandwich, muffin, or slice of banana bread. Practically every time I go to Starbucks, I get their banana bread and some type of latte, tea, or white mocha.
Today, I was determined to recreate Starbuck’s famous banana bread, and I think I nailed it. The best part is that it is super easy to make and has no butter in it! The oil is the key to making it fluffy and moist.

Easy Banana Nut Bread.
- 1 large egg
- 1 cup white, granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk ((any type))
- 1/2 cup avocado, canola, or melted coconut oil
- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1 cup walnuts, chopped
- Honey ((optional))
- Preheat oven to 325 degrees F. Grease an 8 by 4-inch loaf pan. Set aside.
- In a large bowl, whisk together egg, sugar, vanilla, milk, and oil. Whisk in mashed banana. Fold in flour, baking soda, baking powder, salt, and cinnamon. Fold in chopped walnuts. Pour batter into loaf pan, and bake for 55 minutes to 1 hour or until a toothpick inserted in the center comes out clean. Allow to cool slightly, slice, and enjoy warm!
