An easy last-minute Christmas appetizer!
T-2 days until the big day!
With that comes both excitement and stress. I hope these waffle bites make your Christmas appetizer decision an easy and less stressful one. They are so quick to put together and make the perfect appetizer when dipped in some marinara sauce or aioli!
The best part about this appetizer is that you can use day-old mashed potatoes. Itβs a great way to repurpose them β go from cold mashed potatoes to cheesy waffle bites π

Cheddar Sausage Mashed Potato Waffle Bites.
- 5 pounds Yukon gold potatoes, peeled and cubed
- 3 cloves garlic, peeled and smashed
- Salt, to taste
- 1 cup milk ((any type))
- 1 stick unsalted butter
- 3 sprigs fresh thyme
- 4 leaves fresh sage
- 1/2 cup sour cream
- 1 teaspoon ground black pepper
- 2 chicken sausages, cooked and chopped
- 2 cups cheddar cheese, shredded
- Parsley ((for topping))
- To make mashed potatoes, bring the potatoes and garlic to a boil. Salt the water, and cook until the potatoes are soft and tender, about 30 minutes.
- Heat the milk, 4 tablespoons of the butter, sage, and thyme over medium-low heat until the butter has melted. Remove from heat, and set aside until potatoes are done cooking. Remove the sage and thyme before adding mixture to potatoes. Drain the potatoes, and mash them. Add milk mixture to potatoes, and whisk everything together until well incorporated. Add in sour cream and black pepper. Fold in chopped sausage.
- Heat a waffle iron. Add about 2 tablespoons mashed potatoes to each waffle mold, and top with about 1 tablespoon shredded cheddar. Cook until firm, about 3 minutes. Serve warm, and enjoy!
