An easy last-minute Thanksgiving dessert
Thanksgiving is on Thursday, and these Nutella Swirl Pumpkin Pie Bars are the perfect personal-size pumpkin pies.
Instead of a traditional pie crust, they have a graham cracker crust, which I never knew goes so well with the pumpkin filling. However, I had to swirl some Nutella into the filling because well, why not?!
I also made these for my brother’s birthday on November 8, and they were the perfect birthday dessert! As a substitute for a cake, stick a candle in one bar, and you have the a birthday sweet treat!

Nutella Swirl Pumpkin Pie Bars.
- 2 cups graham crackers, crushed
- 4 tablespoons unsalted butter, melted
- 2 large eggs
- 1/4 cup white, granulated sugar
- 1 15 ounce can pumpkin purée
- 1 14 ounce can sweetened condensed milk
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 3 tablespoons Nutella, melted
- Preheat oven to 350 degrees F. Toss graham cracker crumbs with melted butter, and pat into an 8 by 8 inch greased baking pan. Bake for 5-10 minutes until slightly firm. Allow to cool while you make the filling.
- In a large bowl, whisk together the eggs, sugar, pumpkin, sweetened condensed milk, cinnamon, nutmeg, ginger, and cloves. Pour pumpkin filling onto crust, and add drops of the Nutella on top of filling. Swirl Nutella into the pumpkin filling using a butter knife, but do not overmix the Nutella into the pumpkin filling.
- Bake bars for 35-40 minutes or until filling has completely set. Allow to cool completely before cutting into squares. Enjoy!
