Mid to late summer scones
Scones are so comforting. And you may be thinking that comfort food has no place during the summer, but sometimes you just need a fresh baked good to cheer you up.
I love these simple Honey Plum Scones that are not a fuss to prepare and come together in less than an hour. Plus, you can add your own fixings, and if you’re not feeling the plums/prunes, substitute with other dried or fresh fruit!
The honey adds just the right amount of extra sweetness as well as a glossy finish that is very appetizing…at least to me 🙂

Honey Plum Scones.
- 2-1/2 cups all-purpose flour
- 1/4 cup white, granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 8 tablespoons 1 stick unsalted butter, shredded
- 1-1/2 cups prunes or frozen plums, chopped
- 1 large egg
- 3/4 cup plus 1 tablespoon (for spreading on top) buttermilk
- 1 teaspoon almond or vanilla extract
- 1 tablespoon turbinado sugar
- Honey
- Whisk flour, sugar, baking powder, and salt in a large bowl. Working quickly, cut in cold butter using two knives or your hands. Fold in prunes or frozen plums.
- Fold in egg, buttermilk, and extract until just combined. Form dough into square on a well-floured surface. Transfer to cookie sheet, and cut into 4 by 4 inch squares. Separate squares, and place them about 4 inches apart. Chill scones in refrigerator for 30 minutes while you preheat oven to 400 degrees F. Spread extra 1 tablespoon of buttermilk on top of scones. Sprinkle turbinado sugar on top.

Bake scones for 15-18 minutes or until firm and golden brown. Serve warm with honey and butter. Enjoy!
