Roasted Berry Poppy Seed Spinach Salad.
- 1 cup fresh blueberries
- 1 cup fresh strawberries, chopped
- 1 cup fresh blackberries
- 5 cups fresh baby spinach
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon poppy seeds
- 1/2 teaspoon salt
- Preheat oven to 400 degrees F. Add blueberries, strawberries, and blackberries to large baking sheet. Roast berries for 15-20 minutes until their juices have been released. Allow to cool completely.
- Toss spinach with olive oil, vinegar, poppy seeds, salt, and berries. Enjoy fresh!
