Skewers are the safest entrée to a Fourth of July barbecue party!
I think these skewers will be your new favorite barbecue recipe of the summer.
They pretty much scream summer and outdoor dinner parties with family and friends. I find that the fruit paired with the chicken make for an especially refreshing yet hearty main course. The watermelon is truly the star of the show. No pun intended 🙂

Blackberry Dijon Chicken Watermelon Skewers.
Homemade Dijon Mustard
- 1 cup white cooking wine
- 1/2 large white onion, chopped
- 1 clove garlic, minced
- 1/2 cup mustard powder
- 1/2 tablespoon canola oil
- 1-1/2 tablespoons honey
- 1 teaspoon salt
Blackberry Sauce
- 1/2 cup blackberry preserves
- 2 tablespoons water
Chicken Watermelon Skewers
- 1 pound chicken breast, chopped into chunks
- 2 cups fresh watermelon, chopped or cut into stars
- 1 cup fresh blackberries
- 1 cup pearl mozzarella
- To make dijon mustard, add wine, onion, and garlic to a small saucepan. Allow to simmer until fragrant. Cool, and discard the solids. Whisk in mustard powder, oil, honey, and salt. Add chopped chicken to mustard, and allow to marinate for at least 1 hour. Add 3 pieces to each skewer.
- To make blackberry sauce, whisk all sauce ingredients in a small bowl. Set aside.
- Heat large grill pan over medium heat. Grill chicken until fully cooked. Remove 2 of the 3 pieces of chicken from skewer, and add chopped some watermelon, a couple blackberries, and a couple small balls of mozzarella to skewers. Replace remaining pieces of chicken. Drizzle skewers with blackberry sauce, serve, and enjoy!
