For those days when you want a special breakfast but don’t have the time
Happy Tuesday! This recipe is perfect for the middle-ish of the week because when you’re feeling tired and want a special pick-me-up in the morning before work (or school), this is the perfect recipe.
It’s just so easy to prepare. Gourmet french toast in 5 minutes? I’ll take it.

Brown Sugar Peach Mug French Toast.
- 1 large egg
- 1 teaspoon milk ((any type))
- 1 teaspoon ground cinnamon
- 1 teaspoon almond extract
- 2 teaspoons light, packed brown sugar
- 2 slices raisin brioche (Believe it or not, stale bread works best!), chopped into cubes
- 1/2 large yellow peachchopped into cubes
- Fresh peach ((optional))
- Fresh strawberries ((optional))
- Maple syrup
- Whisk egg, milk, cinnamon, almond extract, and brown sugar in a large mug. Add chopped brioche and peaches, and mix gently. Microwave on high for 2 minutes. Top with fresh peach, strawberries, and maple syrup. Enjoy!
