A simple summer quiche
This is definitely one of my favorite quiches!
I’d certainly call this quiche the “Green Goddess Quiche” because it’s packed with all things…well – green! Leek, green onion, and spinach are the stars.
And you can’t forget tomatoes for a little pop of red 🙂

Leek, Swiss, and Green Onion Quiche.
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 stalks leek, chopped
- 2 cups fresh baby spinach
- 2 tablespoons green onion, chopped
- 10 large eggs
- 1/2 cup milk
- 1 pie crust ((homemade or store-bought))
- 3/4 cup swiss cheese
- 1/2 cup cheddar
- 1/2 pint cherry tomatoes
- Heat olive oil in pan over medium low heat. Add garlic, and sautée until fragrant and golden. Add in leek, spinach, and green onion. Sautée until soft and tender. Remove from heat, and allow to cool for 1 minute. Meanwhile, in a separate bowl, whisk together eggs and milk. Roll pie crust into pie plate.
- Add vegetable mixture to pie crust, drizzle on cheeses, and add in cherry tomatoes. Pour in egg mixture. Bake quiche for 35-40 minutes or until eggs have set. Allow to cool slightly, and serve warm or cold! Enjoy!
