The new summer ice cream sandwich
I have to say with certainty that waffle ice cream sandwiches are better than cookie ice cream sandwiches.
The soft, slightly warm waffle just pairs so well with the cool, refreshing (specifically chocolate!) ice cream to make an amazing, over-the-top “s’more.”

The S'more the Better Waffle Ice Cream Sandwich.
- 1/3 cup coconut oil, melted
- 1 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 2 teaspoons white, granulated sugar
- 1 cup all-purpose flour
- 1/2 cup graham cracker crumbs
- 1/4 cup cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup semisweet chocolate chips
- 1/2 cup mini marshmallows
- chocolate ice cream
- Grease and preheat waffle iron.
- In a large bowl, whisk together oil, milk, egg, vanilla, and sugar. Fold in flour, graham cracker crumbs, cornstarch, baking powder, baking soda, and salt. Fold in chocolate chips and marshmallows. Pour waffle batter into iron, filling each waffle mold about 1/2 way. Cook waffles until golden brown. Allow to cool. Spoon a few tablespoons of chocolate ice cream on top of one waffle, and sandwich with another waffle. Roll sides in chocolate sprinkles for extra chocolate. Enjoy!
