A snack for all those summer road trips

I’m introducing the perfect snack to you today: Southwest Chickpeas. Yes, please.

And probably the best snack to take on the go to work, a plane ride, or on your road trip adventures.

Southwest Chickpea Snack.

  • 2 cups chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon chipotle spice
  • 2 teaspoons dried parsley
  1. Preheat oven to 400 degrees F. Toss all ingredients together. Spread onto large cookie sheet, and bake for 40-45 minutes or until chickpeas are crunchy. Enjoy fresh or store in airtight container for up to 2 weeks.
