The perfect burger for Memorial Day

Green Onion Tuna Burgers with Roasted Red Pepper Hummus.
Roasted Red Pepper Hummus
- 2 large red peppers, chopped
- 2 teaspoons plus 2 tablespoons olive oil
- 3 cups chickpeas
- 1/4 cup tahini paste
- 1 teaspoon garlic, minced
- 1/2 teaspoon lemon juice
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground paprika
- 1 teaspoon salt
- 1 teaspoon ground black pepper
Green Onion Tuna Burgers
- 2 cans tuna
- 1/2 cup green onion, chopped
- 1 large egg
- 1/2 cup panko breadcrumbs
- 1 teaspoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon ground cumin
- 1 tablespoon plus 2 teaspoons olive oil
- 1 English muffin, toasted
- 1/2 avocado, sliced
- fresh basil ((optional))
- Preheat oven to 400 degrees F. Add chopped red pepper to baking sheet, and drizzle with 2 teaspoons of olive oil. Roast for 15-20 minutes until soft. Grind all hummus ingredients in food processor until smooth. Set aside.
- Mix tuna, green onion, egg, breadcrumbs, lemon juice, lemon zest, salt, pepper, cumin, and 1 tablespoon of olive oil in a large bowl until fully incorporated. Form about 1/2 cup of burger meat into patties.
- Heat griddle with 2 teaspoons olive oil. Grill or pan fry patties until golden brown. To assemble, spread about 1 tablespoon of hummus onto toasted English muffin, add tuna burger, and top with avocado and fresh basil. Enjoy!
