Healthy Egg-in-a-Hole Toast with Avocado and Sesame.

My everyday go-to breakfast

And just like that it’s the final day of 10 Days of Healthy!

For this final day, I am bringing you my favorite breakfast of all time: Healthy Egg-in-a-Hole Toast with Avocado and Sesame – or as my dad calls it: “The Breakfast of Champ-eens”!

There’s a reason he calls this the “Breakfast of Champ-eens (or Champions)” though. It’s packed with protein, good carbohydrates, and healthy fats thanks to our friend, the avocado! The egg (or add two eggs as I almost always do :)) adds protein, vitamin D, vitamin B2, zinc, and iron. The Early Bird Multiseed Bread I purchased from Whole Foods adds protein, carbs to get you going, and fiber. And of course that avocado is going to give you monounsaturated fatty acids that keep you full. Yes, yes, and yes, please!

And with that, I say see you on Saturday for a little bit of a more unhealthy recipe…but everything in moderation, right? 🙂

Healthy Egg-in-a-Hole Toast with Avocado and Sesame.

  • 2 teaspoons coconut or canola oil
  • 1 slice Early Bird Multiseed Bread (I purchased mine from Whole Foods.), hole removed
  • 1 large egg
  • 1/2 avocado
  • sesame seeds ((for topping))
  • dried parsley ((for topping))
  • chives, chopped ((for topping))
  1. In a large skillet, heat oil. Add slice of bread to skillet, and crack egg in the hole. Cook until egg is cooked to your desire, about 3 minutes.
  2. Serve egg-in-a-hole with avocado, sesame seeds, parsley, and chives. Enjoy, and conquer the day!
