And this Blueberry Pancake Greek Yogurt Breakfast Bowl is the perfect way to do just that.

Blueberry Pancake Greek Yogurt Breakfast Bowl.
Granola
- 1 cup old-fashioned rolled oats
- 1/4 cup chia seeds
- 1/4 cup coconut, shredded
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1/2 ripe banana, mashed
- 1/4 teaspoon vanilla extract
Breakfast Bowl
- 2 cups Greek yogurt
- 1 cup fresh blueberries
- kiwi, chopped ((optional))
- 1 tablespoons honey
- Preheat oven to 375 degrees F. Combine oats, chia seeds, coconut, coconut oil, maple syrup, banana, and vanilla extract in a large bowl. Spread mixture onto baking sheet, and bake for 20-25 minutes or until granola is toasted. Allow to cool.
- Add Greek yogurt to bowl, and top with granola, fresh blueberries, kiwi, and honey. Enjoy!
