Sage "Faux-tisserie" Chicken with Thyme Roasted Potatoes.

  • 1 pound whole chicken, giblets removed and chicken washed
  • 4 cloves garlic
  • 2 teaspoons ground black pepper
  • 2 teaspoons salt
  • 2 teaspoons paprika
  • 1/2 teaspoon ground cayenne pepper
  • 2 teaspoons fresh thyme
  • 2 teaspoons fresh or dried oregano
  • 3 tablespoons olive oil
  • twine ((to hold chicken together))
  1. Preheat oven to 350 degrees F. Stuff the chicken cavity with garlic.
  2. In a small bowl, whisk together the black pepper, salt, paprika, cayenne pepper, thyme, and oregano. Rub the olive oil all over the chicken exterior. Sprinkle spices all over chicken, and make sure entire exterior is coated well.
  3. Tie the chicken legs together with twine, and place chicken in roasting pan. Roast for 3 hours, basting at the 1 and 2 hour marks. Allow the chicken to cool slightly (only about 10 minutes) before slicing and serving. Enjoy!
