Frighteningly easy appetizers for a last minute Halloween party
Is it ironic that these monster burgers are actually vegetarian?
If you prefer meat burgers, you can easily substitute ground beef or turkey. However, pinto beans have so much flavor, and I love showcasing them in recipes. Plus, purchase them canned, and they can be stored for months!
Halloween is only four days away, and it seems that it came up way too fast. However, I have one more Halloween recipe for you so be sure to stay tuned 🙂
Mini Monster Pinto Bean Burgers.
- 1 tablespoon canola or olive oil
- 2 cups pinto beans, mashed
- 1 large egg
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground cayenne pepper
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 clove garlic, minced
- 1/4 large white onion, finely chopped
- 1 cup panko breadcrumbs
- mini brioche buns, toasted
- French fries, homemade or store-bought
- lettuce, for topping
- red pepper-stuffed olives on toothpicks, for eyes ((optional))
- ketchup, mustard, or mayonnaise ( (optional))
- Preheat large skillet with canola or olive oil over medium heat.
- In a large bowl, mix together mashed pinto beans, egg, cumin, cayenne pepper, salt,
- black pepper, garlic, white onion, and panko breadcrumbs until well combined.
- Take about 2 tablespoons of mix for each burger, and fry in oil, about 3-4 minutes on
- each side. Add each burger to buns, top with lettuce, French fries, and your choice of
- sauce. Close burger with other half of bun, and top with olives on toothpick to give
- the little monsters eyes. Eat!
