Peach season is never going to end around here!
This is probably the easiest and most fancy dinner in one on the site so far. I love salmon, and more importantly, I love easy salmon recipes. Salmon is one of those foods that you can incorporate into either a fancy or ordinary dish (definitely one of the reasons I love it!).
I’m not going to say much about this dish other than that you have to make it. If you’re short on time yet still want to eat healthy and feel guilty ordering pizza, it’s the perfect dinner to pop in the oven and call it a night!

Baked Rosemary Chili Salmon and Peaches for One.
- 1 salmon filet
- 2 teaspoons ground dried chili pepper
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- ¼ teaspoon cayenne pepper
- 1 peach, chopped
- 2 sprigs rosemary ((or 3 teaspoons dried rosemary))
- 1 tablespoon olive oil
- Preheat oven to 400 degrees F. Place washed salmon filet in small cast iron skillet. Mix chili pepper, black pepper, salt, and cayenne pepper together in a small bowl. Rub half of spice mixture on salmon, and toss the other half with the chopped peaches. Add peaches to skillet, and top salmon and peaches with rosemary sprigs or dried rosemary. Drizzle olive oil on salmon and peaches.
- Bake salmon and peaches for 20-25 minutes, or until peaches are caramelized and salmon is fully cooked. Serve with additional fresh rosemary, and dig in!
