Green Goddess Avocado Basil Grilled Cheese

I think I have officially made the best grilled cheese sandwich ever.

I really don’t have any words for this grilled cheese other than best sandwich ever?!!!

Yes, definitely best sandwich ever.

I mean, I am borderline obsessed with basil and grilled cheese separately and then I had to go and put them together and add avocado. I think that calls for triple thumbs up. Oh wait, that’s not even possible…

The avocado just pairs so well with the melt-y American cheese that it’s like heaven in your mouth, which is why “goddess” is in the sandwich’s name. This recipe is also a good way to sneak some greens like spinach or kale into a grilled cheese – especially for picky eaters.

Also, who says there’s no such thing as summer comfort food? I would say this is the epitome of summer comfort food – greens in a grilled cheese sandwich. Even better, this sandwich takes 5 minutes to make, tops. You can also cut each half into three triangles, and serve the grilled cheese as little finger sandwiches at a late summer party or barbecue. If you really want to be fancy, just keep them heated on a pan over really low heat or outside on a hot summer day. They’re sure to stay warm then 🙂 Actually I don’t really recommend that because of the cheese, but cold or hot, this sandwich still tastes good thanks to basil, which is my absolute favorite herb if you have not gotten that feeling already 🙂

Green Goddess Avocado Basil Grilled Cheese

  • 6 slices your favorite bread
  • 3 tbsp butter or buttery spread ((I used Earth Balance buttery spread.))
  • 1 avocado, mashed
  • 6 slices American cheese
  • ¾ cup fresh basil
  1. Heat a large skillet over medium-low heat.
  2. Spread ¼ tbsp of butter or buttery spread on each bread slice. Place bread slices butter side face down on heated skillet. Spread about 1 tbsp mashed avocado on one bread slice per sandwich (therefore, only three of the six bread slices). Lay 2 slices of American cheese on each of three bread slices. Top each of the three bread slices with about ¼ cup of basil. Close each sandwich with the remaining three bread slices. Cook the sandwiches over medium-low heat for about 2-3 minutes or until the cheese has fully melted and the bread is golden brown. Cut each sandwich in half. Serve, and dig in! Yum!
