A simple oatmeal…with a spin!
I love oatmeal – especially in the winter. When you don’t want cold, bland cereal, you can substitute with oatmeal.
That’s why today I decided to share this wintery combination of honey and orange with a chia oatmeal. Yum!
Another reason I love oatmeal is because you can dress it up to your preference and need – add chia, fruit, maple syrup, honey – the possibilities are endless. In fact, my entire list of reasons why I love oatmeal is also endless. Imagine you’re running late and are so tempted to grab that sugar-overload, artificial granola or cereal bar. Prepare this oatmeal ahead of time or whip it up in only 10 minutes, and say goodbye to hungry mid-mornings.
This is also my attempt at a healthier year. Replace a typical donut or sugary muffin with this oatmeal, and you’re golden and ready to take on the day.
I love blood oranges since they’re so pretty and picture-perfect. Of course, if you’re short on oranges or even any type of fresh fruit, you can add some frozen fruit. I honestly don’t mind the chill and slight crunch of the frozen fruit paired with hot oatmeal. I mean, all the ice practically melts once you place it in the hot cereal.
I hope you enjoy this quick, light breakfast (or snack…), and make it as many times as I do – which as you can imagine, is a lot.
xoxo

Blood Orange Honey Chia Oatmeal
- 1 cup of old-fashioned rolled oats
- 1/2 cup of chia seeds
- 1-1/2 cups of milk ((any type))
- 1 cup of water
- 2 tsp of vanilla extract ((or 1 packet of vanilla sugar))
- drizzle of honey
- blood orange slices
- In a medium saucepan, combine the oats, chia seeds, milk, and water. Bring the mixture to a boil, and then let simmer over medium heat, stirring frequently until the oats have absorbed the liquid, about 10 minutes.
- Remove oatmeal from heat, and stir in vanilla extract or vanilla sugar.
- Top with orange, and drizzle on honey. Enjoy with extra chia seeds for added protein and fiber. It’s that simple!
