A magical combination of sweet and savory ingredients on top of a bed of fluffy pizza dough!
Let me start by saying I love figs. I was never too crazy about them, but this summer, I had the most delicious figs, and couldn’t wait to add them to a flatbread or pizza. Today’s the day I finally get to show you this amazing pizza with the sweetest figs.
Did you know figs belong to the mulberry family? I’ve never tried mulberries, but would probably like them since I really like the texture and subtle taste of figs.
This weekend is Labor Day weekend, and this recipe is the perfect appetizer to kick things off. Pair a slice of the pizza with grilled mango salmon or chicken, and you’re surely savoring the last of summer’s fruits 🙂
It’s a bit sad that all the fresh summer fruits will no longer be in season. Tomatoes. Strawberries. Peaches. Of course figs. Though, I’m not really worrying since they’re all making way for the most versatile, flavorful, most festive, and all around best fruit of all time… pumpkins!! Can you tell I love gourds? Those will be subjects of other posts in the next few weeks 🙂
Back to this pizza. If you’re not feeling the goat cheese, substitute with feta. However, the textures in this pizza really go well together – a crunchy crust, soft cheese, tender figs, and sweet, gooey balsamic. Yum!
Fig, Caramelized Onion, and Goat Cheese Pizza with Balsamic Reduction
Balsamic Reduction
- 1 cup of balsamic vinegar
- 1 tbsp of white, granulated sugar
Pizza
- 1-1/2 yellow onions, sliced
- 4 tbsp of olive oil
- 1/2 cup of light brown sugar
- 1/4 cup of cornmeal
- 16 oz of your favorite pizza dough
- flour ((for sprinkling))
- olive oil ((for sprinkling))
- 3/4 cup of mozzarella, shredded
- 1-1/2 cups of figs, sliced
- 1 cup of goat cheese
- In a medium saucepan, add balsamic and white sugar. Stir well, and let mixture simmer for 10-15 minutes or until is develops a thicker consistency.
- To prepare the caramelized onions, add onions, olive oil, and brown sugar to medium saucepan. Stir frequently, and cook for about 10 minutes or until the onions are brown and soft.
- Preheat oven to 400? F. Line baking sheet with parchment paper. Sprinkle cornmeal on baking sheet.
- On a well-floured surface, roll out pizza dough until it is about 1/2 inch thick. With fingers, make indentation along the edges of the dough for the crust. Sprinkle about 2 tsp of olive oil over the pizza dough. Spread evenly. Remove caramelized onions from heat and allow them to cool. Sprinkle shredded mozzarella over dough. Add caramelized onions to dough. Crumble the goat cheese, and sprinkle on top of onions. Top with the fresh, chopped figs. Drizzle balsamic reduction over top of pizza.
- Bake pizza for about 30 minutes, or until edges are golden brown. Drizzle with more balsamic reduction, and serve while hot. Dig in!
