Warm French toast with summery peach compote
Maple French Toast with Peach Compote
- 2 slices of challah bread
- 2 large eggs
- 1 tsp of maple syrup
- 1/2 tsp of ground cinnamon
- 1/8 cup of milk ((any type))
Peach Compote
- 1 large, yellow peach
- 1/8 cup of water
- 1/4 tsp of ground nutmeg
- 1/8 cup of packed, light brown sugar
- Chop peach into small chunks. To prepare peach compote, combine peaches, brown sugar, water, nutmeg, and cinnamon in medium saucepan over medium heat. Cook until the liquid is reduced to a medium-thick syrup, which takes about 15 minutes.
- Whisk eggs, milk, and maple syrup in a wide bowl. Place bread slices in egg mixture, and then cook each side on a griddle over medium-low heat for about 2 to 3 minutes.
- Remove slices from heat, and garnish with the peach compote, whipping cream, and a mint leaf. This is the ultimate breakfast indulgence. Enjoy!
