Personal-size French toast with tons of banana flavor!
Baked Banana Oat French Toast
- 2 slices of challah bread
- 2 large eggs
- 1/4 ripe banana, mashed
- 1/8 cup of milk
- 1 tsp of maple syrup
- 1/2 tsp of ground cinnamon
- 1/4 cup of rolled oats
- Preheat oven to 350?F. Grease ramekins with butter or nonstick cooking spray.
- Cut challah bread into cubes, and in a large bowl, whisk together eggs, milk, maple syrup, cinnamon, and the mashed banana.
- Add oats and cubed bread to egg mixture, and mix together genly.
- Spoon about 3 tbsp of french toast mixture into each ramekin, and add a few slices of banana to each ramekin.
- Bake french toast for 15 minutes or until tops are slightly golden brown. Top with additional fresh banana, and enjoy warm!
