Banana Cinnamon Muffins.
- 1/2 cup of canola or vegetable oil
- 2 eggs
- 2 large, very ripe mashed bananas
- 1 tsp of vanilla extract
- 2/3 cup of sugar
- 1-2/3 cups of All-purpose or Self-rising flour
- 1 tsp of baking soda
- 1 tbsp of ground cinnamon
- 1/2 tsp of salt
Topping
- 1/8 cup of melted butter or margarine
- 2 tbsp of white, granulated sugar
- 1 tbsp of cinnamon
- Preheat oven to 350?F. Place cupcake liners in tin or spray tin with nonstick spray.
- In a standing mixer fitted with a paddle attachment, beat eggs, oil, and sugar until creamy. Once creamy, beat in vanilla and bananas.
- Mix in flour, salt, baking soda, cinnamon, and salt until fully incorporated. Pour batter in muffin cups.
- Bake muffins for 15-20 minutes or until toothpick inserted in center comes out clean.
- In a separate, small bowl, mix sugar and cinnamon. Smear melted butter over muffin tops, and sprinkle cinnamon-sugar mixture. Serve and enjoy!
