Cinnamon Waffles.
- 4 eggs, separated into egg yolks and egg whites
- 2/3 cup of butter
- 2 cups of milk
- 1/2 cup of sugar
- 2-2/3 cups of flour
- 1/2 tsp of salt
- 2 tsp of baking powder
- 2 teaspoons ground cinnamon
- Preheat waffle iron. Beat egg whites until fluffy in a bowl. Set aside.
- In a separate bowl, beat egg yolks, butter, milk, and sugar until light and fluffy. Fold in flour, salt, baking powder, and cinnamon. Fold in egg whites until just combined, but do not deflate them.
- Add about 1/2 cup of batter for each waffle to iron. Cook for 2-3 or until waffles are golden brown and fully cooked. Serve warm with maple syrup. Enjoy!
